Preheat oven to 350 degrees.
Add all wet ingredients to a bowl and mix. Pour in dry ingredients except for the chocolate chips and mix again. Lastly fold in the chocolate chips.
Scoop batter into a silicone or lined muffin tin, filling each tin 3/4 of the way. I used an ice cream scooper to do this.
Bake muffins for 25-30 minutes, until a toothpick comes out clean.
