Preheat oven to 425 degrees.
Add chickpeas and zucchini to a sheet pan lined with parchment paper or silicone. Toss with oil, salt, pepper and spices. Bake for 25-30 minutes.
Add all green goddess sauce ingredients to a blender or food processor and blend until smooth.
Assemble bowls with quinoa, chickpeas, zucchini, sauce and arugula. Dig in and enjoy.
