Preheat oven to 425 degrees.
Add pickle juice and water to a pot and bring to a boil. Add potatoes and boil for 15-20 minutes, until they are soft enough to smash.
Add potatoes to a nonstick sheet pan or one lined with parchment paper. Using the bottom of a jar or glass, smash each potato.
Coat potatoes in oil, garlic powder, salt and pepper. Bake for 30-35 minutes, until crisp.
Let potatoes cool, top with dill (if using) and dig in.
