Preheat oven to 350 degrees.
Add blueberries to a bowl and toss with the flour until the blueberries are coated.
Mix together bananas, egg, olive oil, maple syrup, spelt flour and baking powder until smooth. Do not overmix the batter. Lastly fold in blueberries.
Pour batter into a loaf pan lined with parchment paper.
Bake for 50-60 minutes or until a knife or tooth pick comes out semi clean. I baked mine for 60 minutes on the dot.
Let bread cool for an hour in the loaf pan before slicing. If you slice the bread before it is cool it will be crumbly.
