Heat butter over medium heat in a skillet or wok. Add shrimp, cover with salt and pepper and sear for 90 seconds each side. Remove shrimp from the skillet. Add sesame oil along with the green beans and scallions and a pinch more of salt. Cook for 5 minutes. Add ginger and garlic and cook for 3 more minutes. Add rice, soy sauce, lime toss to combine and cook for 3 more minutes. Lastly fold in the shrimp and bok choy. Cook until bok choy is wilted. Divide out, top with cilantro and serve.
